How to Keep Ice from Sticking to the Tray
Ice sticks to trays for three reasons: the tray is still at deep-freezer temperature, the cells are rough or damp, or you are twisting instead of pressing. All three are easy to fix, and none of them require running the tray under hot water.
Wait two minutes before you try
The simplest fix is also the most skipped. Right out of the freezer, the silicone or plastic is at its coldest and most rigid, which makes the ice grip harder. Leave the tray on the counter for two to three minutes so the material warms slightly, then release. The ice usually slides out with the first press.
This works because the tray warms faster than the ice. A thin temperature difference forms at the contact surface, which is enough to break the bond without melting the cube.
Press from the bottom instead of twisting
Flexible trays release best when you press the base of each cell from underneath. Twisting the whole tray bends the walls against the ice and makes sticking worse. Press, hear the cube pop, and move to the next cell.

Run the underside under warm water
If a cube still refuses to move after pressing, hold only the underside of the tray under warm water for a few seconds. The water should touch the tray, not the ice. This melts a thin layer at the base while the cube stays solid.
Avoid pouring water over the top of the tray, because it melts the cubes themselves and leaves you with misshapen, half-soft ice.
Keep cells clean and dry
Residue from previous batches is a hidden cause of sticking. Oils, detergent film, or leftover flavored liquid dry into a sticky layer inside each cell. Wash the tray with warm water and let it dry completely between uses; a dry, clean cell releases far more reliably.

Break in a new tray before trusting it
Brand-new silicone can carry a thin release agent from manufacturing. Wash it with warm soapy water, dry it completely, and freeze one test batch of plain water. The second batch usually releases noticeably better than the first.
